When I want a quick and very satisfying meal I throw this together:
Organic Brown Rice Fusilli Pasta or one of the other gluten free pasta options (Trader Joes) … Boil in purified water (add a dash of salt, and some olive oil to the water). Don’t overcook.
While the pasta is cooking … organize fresh spinach, your favorite shredded cheese (Parmesan is tasty), chunks of avocado, olive oil, salt, pepper.
Drain the pasta, add olive oil, fresh spinach, cheese, salt, pepper and mix until the spinach wilts some and the cheese melts. Toss in the avocado (optional) just before serving.
For a more substantial meal I heat up cooked chicken chunks and add the heated chicken to the cooked pasta mix above. Shrimp is another good option.
Serve with a salad and you have a great meal that everyone enjoys!
